Last Tuesday (January 26, 2010) I whipped up my first batch after a 5 year break. I used a Coopers IPA extract kit with approximately 500 grams of LME, speciality dry yeast (I can't remember the type - I always toss the yeast the comes with the kits, they're usually no good), and probably about 3 tablespoons of Golding hops.
I brought about a gallon of water to a boil (gonna get a bigger pot), took it off the heat, added the extract and stirred till dissolved, then back on the heat for about a 20 minute boil. Added the hops, then the LME, and boiled for about another 20 minutes.
Chilled the wort in the sink with ice, then poured into the primary and topped up, slashing it around as much as possible to aerate. Took the primary down the basement (probably around 19-20 degrees Celsius) and pitched in the yeast. I didn't bother hydrating the yeast, just sprinkled it in dry.
The next day the wort was fermenting furiously. It's now Saturday (Jan 30) and the fermentation has slowed to nothing. I'll probably be moving it to the secondary fermenter tomorrow.
